Healthy Recipe – Avocado Grapefruit Butter Lettuce Salad + Cilantro Lime Vinaigrette

We love this salad as is loaded with tons of fresh cilantro, ripe avocados, tangy citrus, and a slight crunch from the sunflower seeds, this Avocado Grapefruit Butter Lettuce Salad is one for the rotation! 

We followed this recipe from Jennifer Fisher’s Kitchen and made a couple of minor adjustments. 

Ingredients:

Avocado Grapefruit Butter Lettuce Salad:

  • 2 cups butter lettuce, torn into bite-size pieces
  • 1 avocado, diced
  • 1 tomato, diced
  • 1 grapefruit, diced (can substitute with an orange)
  • Handful of roasted, unsalted sunflower seeds
  • Optional: 1/4 cup Pickled Red Onions

Lime Cilantro Vinaigrette:

  • 1/2 cup olive oil
  • 10-20 fresh cilantro leaves, finely chopped
  • 3 Tbsp fresh squeezed lime juice
  • 1 Tbsp apple cider vinegar
  • 1/2 tsp oregano
  • 1 tsp red chili flakes
  • 1 tsp water 

Instructions:

Avocado Grapefruit Butter Lettuce Salad:

Place all of the salad ingredients in a bowl and pour the dressing over. Enjoy!
 
Lime Cilantro Vinaigrette:

Place all the ingredients in a blender and pulse until you reach your desired consistency.
